Recipe: Lemon Yoghurt Muffins

rind of 1 large lemon or 2 small ones
3/4 cup sugar
1/4 cup oil
1/2 tsp salt
1 large egg
1/4 cup lemon juice
1 cup vanilla yoghurt
2 cups self raising flour

Grate lemon rind into a large bowl.

Add the next 6 ingredients and mix well.

Sprinkle the flour on top and stir until just combined.

Bake at 190 degrees for 10-12 minutes or until lightly browned.

I like to bake with Riley, even if sometimes he doesn't actively help it still keeps him occupied and then hes not bothering me. Today he got a little side tracked licking the inside of the lemons after I'd juiced them. He apparently 'loves it' (lemons), those were his words too.

These muffins are so quick and easy to make. They are delicious warm out of the oven and are the cause of major tantrums at lunchtimes. Riley doesn't usually like muffins but these ones definitely have his seal of approval.
