Well I loved the idea but the recipe was a bit of a let down. So I set about tweaking it a bit and now we have a yummy pancake recipe that works for both chocolate chips and blueberries, perfect for a treat or special occasion. If you find the blueberries a bit tart, I'd add some extra sugar or serve with maple syrup, yum! The batter also keeps really well in the fridge.
2 cups plain flour
1tbsp baking powder
1/4 cup sugar
1 1/2 cups milk
1 tsp vanilla
1/2 cup mini chocolate chips or frozen blueberries
Sift together the flour, baking powder, salt and sugar.
In a separate bowl combine the eggs, milk, oil and vanilla. Add to the dry ingredients and mix well. Stir in the chocolate chips or blueberries.
Pour 1/4 cupfuls into a lightly greased pan. Turn when bubbles form on top, cook until both sides are golden brown.
