Recipe: Date and Walnut Loaf

It has been ages since I've done any baking but when Phil's parents came down to visit, they brought a whole heap of walnuts down for us, so I decided to get back in the kitchen and make this super yummy date and walnut loaf.

INGREDIENTS
1/2 cup plain flour
1/2 cup bran flakes
1/2 cup wholemeal flour
1/2 cup chopped dates
1/4 cup chopped walnuts
1/4tsp salt
1 egg
1tbsp sugar
1/4 cup golden syrup, warmed
1tbsp melted butter
1/4 cup milk
1/2tsp baking soda
- 1/4 cup hot water

-Sift flour into a bowl. Add bran, wholemeal flour, dates, walnuts and salt.

- In a seperate bowl beat egg and sugar together. Add golden syrup, melted butter and milk. Mix into dry ingredients.

- Dissolve baking soda in hot water and add. Mix well.

- Pour into a greased 18cm loaf tin. Bake at 190 degrees for 45 minutes or until loaf springs back when lightly touched.

- Leave in tin for 10 minutes before turning out onto a wire rack.
