I love tabouli! It's the perfect summer salad. Mine is a little bit different to traditional tabouli as I like to add in a few extra ingredients depending on what I have on hand but you can add whatever you like, it's so versatile.
1 cup burghal (cracked wheat)
2 cups boiling water
2 medium tomatoes, seeds removed and finely chopped
1 medium carrot, grated
3/4 cup flat leaf parsley, chopped
feta (optional, add as little or as much as you like)
2 tbsp lemon juice
1 tbsp olive oil
freshly ground black pepper, to taste
Soak the burghal in the water for 10 minutes. Drain and squeeze out excess water from the burghul in a sieve, pressing down hard with the back of a spoon.
Put burghul, parsley, tomato, grated carrot, feta, lemon juice, olive oil and black pepper in a bowl. Gently mix to combine.
