This recipe is so easy and delicious!
3tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
1 inch piece of ginger, finely grated
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp tumeric
1/4 tsp cinnamon
chili flakes, to taste
2x 400g can chickpeas
1x 400g can chopped tomatoes
1 tsp salt
Heat olive oil in a large saucepan. Add onion and cook until soft.
Add garlic and ginger and cook for 1 minute. Add cumin, coriander, tumeric, cinnamon and chili flakes and cook for another minute.
Add chickpeas, tomatoes and salt. If the mixture is too dry add a splash of water.
Cover and simmer for 20 minutes, stirring occasionally
Let sit for 10 minutes before serving with rice.
