Name Change

I've only had this blog for a couple of months and already its undergoing a name change. I guess when I first started I didn't really know what to expect or what direction my blog would take. Now that I've been at it for a little while I decided that it was time for a name that reflects more aspects of my life and not just my life with Riley. I was going to make a new header/background as well but for now this will do.

Welcome to Imagination Overload!

I think the new name will allow me to express my creative side better and reflects how my brain works and of course includes Riley's ever growing imagination and all the fun stuff that comes with it.

Brain Explosion!

Yikes, moving day is just a week away now and there is still so much to be done, I can't wait for it to be over!

I'm really excited about Riley's new room. At the moment his room is hideous. Its red and purple and clashes terribly. You can't imagine how good it will be for him to have a 'normal' room. Even though its a rental I'll still be able to personalize it for him to some degree.

We're going with a dinosaur theme as I picked up some cheap dinosaur stuff from K-Mart and the idea kinda grew from there. My brain is exploding with ideas which I'm trying to sort through and figure out what I can do and what will work. I want to do it as cheaply as possible while still being able to create a cool room for him to hang out in. I can't wait to get started!

So watch this space!

Microwave Recipe: Sponge Pudding

Along with budgeting and menu planning I've given myself a goal of trying one new recipe a week. I'm trying to mix things up a little and get excited about food/cooking again. When I can I'll try and include photos but sometimes that just doesn't happen especially when I have hungry mouths to feed (namely Riley).

This weeks recipe isn't the healthiest but it was super quick to make and made a delicious sweet treat. I used golden syrup in the bottom of my dish and it was sooo good. I think it was slightly over cooked so next time I'll try cooking it for 3 minutes (instead of 3 1/2) and see if that makes a difference.

50g butter
50g caster sugar
50g self raising flour
1 medium egg, beaten
2 tbsp milk
 2 tbsp golden syrup or jam

- Cream together the butter and sugar until smooth.

- Gradually mix in the milk.

- Sift the flour and fold in gently.

- Put 2 tbsp of golden syrup or jam in the bottom of a microwave safe bowl. Pour the batter on top.

- Cover and cook for 3 1/2 minutes on full power, or until pudding is set. Tip onto a plate.

- Serve hot with custard.

What a Night!

Its been a while since Riley has woken up during the night and I think he was making up for it last night. He used to wake screaming about once a week for no reason (we think he was having nightmares but we couldn't get any sense out of him). Last night he woke at 2:30am absolutely hysterical. Phil did manage to get him back to bed after a while and much sobbing but an hour later and he was screaming again.

You think I'd know better by now but I decided it would be easiest for Riley to come into bed with me, as thats what he wanted anyway, so we could all get some sleep. Phil went and slept in Riley's bed as he had to get up for work at 5:30am!

Well Riley took a couple of hours to go back to sleep. He was nice and quiet though but I just don't sleep well with him in my bed and no matter where I put him he always ends up sleeping on my pillow or on me with me right on the edge of the bed too scared to move in case I wake him up. The other thing is he snores really badly and I only ever end up dozing and every time he moves/rolls over I wake up. Needless to say I didn't get much sleep, heres hoping Riley will have a nap this arvo so I can have one too. I'm hoping Riley doesn't wake again tonight as one night of little sleep is more than enough, I did secretly enjoy snuggling with him though.

My Little Adrenaline Junkie (photo overload)

We popped into the mall today to do a wee bit of shopping and they had one of those huge bungy trampolines. Riley was fascinated by it but of course watching was just not good enough. It cost $10 to go on it and I wasn't sure whether Riley would actually like it but he was screaming and trying to shred his way out of the pram he wanted it that bad.

It was awesome, Riley loved it! He had an absolute blast, giggling and shrieking with excitement, needless to say he was very upset when his turn was over. He didn't quite get the whole jumping bit but it didn't matter.

Change is in the Air

I made a start on packing today. I only packed a couple of boxes as thats all I could find in the garage that were a suitable size for what I wanted them for, it felt good to get started though.

I took Riley out with me to fetch the boxes and as soon as we were back inside we had the following conversation:
Riley: "Riley wants to stay here."
Me: "Wheres here?"
Riley: "Riley's house. My house."
Then after I'd packed a box and was carrying it out of the lounge Riley yelled after me, "Don't go without Riley!"

I've fallen for it again, sigh. We've talked about the new house many times now but each time it seemed like Riley wasn't listening or didn't fully understand what I was trying to tell him. You'd think I would've learnt by now that he is a smart kid and not to underestimate him.

His world's going to be turned upside down in the next couple of weeks and thats when the fun will truly begin. Sure hes attached to this place as its the only home that hes known but I'm hoping that once we are all settled into the new place he'll like it just as much. Yes it will be different but sometimes different can be good.

What a Mess!

Riley entertained himself this morning by emptying all the toys out of his toy box. He was on a mission to find a small red ball that goes inside his dump truck. He didn't find it but he found plenty of other interesting things that he'd forgotten all about.

Hello Sun!

I still find it amazing how the weather can so easily affect my mood. I'm loving sunny days like today where it feels like Summer is just around the corner. It was still pretty cold but with the sun and no wind whatsoever it was colder inside than out. Riley spent over an hour outside having so much fun. He did a bit of painting, helped me do some weeding and raced around the garden pushing his truck for ages. We would've stayed out longer but I needed to make some lunch and Riley kept traipsing mud through the house to see what I was doing, so not cool.

Riley has finally mastered doing roly polys. His legs have obviously grown because before now they weren't quite long enough to push himself all the way over. He was very proud of himself and spent ages just doing roly polys all over the lounge. He is growing up way too fast!

Super Star in the Making!

Riley loves to sing. He has an amazing memory and learns song lyrics really easily. His favourite song at the moment is Hakuna Matata from the Lion King which he is constantly singing and includes all of the appropriate intonations and facials, LOL. I haven't been able to get a good video of him singing it yet though as he gets distracted by the video camera.

Below is Riley singing a 'medley' of sorts. He does know the words to Twinkle Twinkle but he thought it would be more fun to sing his own version of the song which then merges into Ba Ba Black sheep.

We have a house and the move date has been set for the 30th of July. Now I'm going to be super busy for the next couple of weeks. I hope Riley understands and takes the move well as this is the only home that he'll remember.

A Good Day

Good days seem to be few and far between at the moment (I blame winter) but today was one of the good ones and even the weather was on our side. We did get a bit of a surprise when we got up in the morning though and found ice on the INSIDE of the windows!

Today we took Riley for his first ride on the bus. He was a little alarmed when we first got on and wanted to sit on my knee so I squeezed in close next to him and he was fine. The destination of our bus ride was the library where Riley wasn't all that interested in the books (I chose some for him anyway) but played with the few toys they had out. He loved catching the bus but it would have been a lot more enjoyable if we weren't all freezing to death despite the sun. On the ride back he held my hand the whole way.

In the afternoon we went and looked at another house. Its a little on the small side but the positives far out-way the negatives and we liked it so much that we've put in an application for it. Wish us luck!

Low in Iron?

I've recently started Riley on Floradix Iron Formula. We don't eat a lot of red meat and I worry about him getting enough iron. I know there are other sources of iron but being a toddler he can be a little bit fussy. There is no real way to tell if Riley is iron deficient except for having a blood test and I don't want to put him through that. He is very olive skinned but at the moment he always looks pale and unwell (at least to me he does) but then maybe its just the winter weather that is affecting him so bad this year. I'm not sure if I've seen any difference in him since starting the supplement but its not going to harm him and hopefully it is helping plus he likes it.

No Day Sleep

Riley is still not sleeping all that often during the day now. I've still been putting him down for his nap as normal with little or no success so today I decided to try something different. I kept him up. I know you probably think I'm mad and don't worry for a while there I thought I was too! Instead of putting him to bed I put on his fave DVD (Dora the Explorer) and he 'rested'. Even though he looked totally shattered for the rest of the afternoon we only had minimal tears and tantrums. I'm not sure I'm ready for him to give up his day sleeps but they weren't working anymore so the hunt is on to find something that will. There goes my free time, sigh ....

Recipe: Baked Bean and Cheese Roll Ups

Riley usually has toast for lunch (his choice) but I find it so boring considering he has toast as part of his breakfast as well. So I decided to get a bit inventive and try something different. I had leftover baked beans in the fridge which needed using but I wanted to use them in a way that wasn't too messy for Riley to eat (or for me to clean up).

These were so yummy and quick, I ended up having to make more for Riley as he couldn't get enough of them. You could adapt them for grown ups and make a filling out of whatever you have handy (although theres nothing wrong with good old baked beans and cheese).

- multi-grain bread, sandwich slice
- baked beans
- mixed herbs
- grated cheese
- margarine
- tooth picks

- Cut the crusts off the bread and roll each piece out flat with a rolling pin.

- Mash some of the baked beans to make a paste.

- Add mixed herbs to taste.

- Spread one side of each piece of bread with margarine. Turn over and spread the other side with a little of the baked beans.

- Put a little grated cheese on top and roll up diagonally securing with toothpicks.

- Grill until crispy and golden.

- Remove the toothpicks before serving.

I've finally finished it!

As I mentioned in this post here I was in the process of reading the Sword of Truth Series by Terry Goodkind (12 books in total). Well I've finally finished the last book which was also the only one out of the series that I hadn't previously read. It was good ... mostly. A bit slow in parts and I felt that it all ended rather anti-climatically. Considering the whole build up to the end and how long the series is I imagined something a bit more exciting and dramatic. Now that I'm finally finished I'm at a bit of a loss as to what to read next, though I am very excited about Terry Goodkind releasing a new Richard and Kahlan novel in 2011, I can't wait! Bread Maker Recipe: Wholemeal and Sunflower Seed Loaf

- 385 mls warm water
- 2 tbsp oil
- 2 tsp salt
- 2 tbsp sugar
- 4 cups wholemeal flour
- 1/8 tsp vitamin c powder
- 2 tbsp milk powder
- 2 1/2 tsp yeast
- 1/2 cup sunflower seeds
SETTING: 6 WHOLEWHEAT: P - Medium, H - Dark or L - Light

- Add all the ingredients except the sunflower seeds into your bread maker in the order listed.
- Select the wholemeal setting and what crust colour you want.
- Add 1/2 cup sunflower seeds to the dough when it beeps (about 20 minutes into mixing).

I love my bread maker!

My bread maker would have to be one of our best buys and we've definitely gotten more than our moneys worth out of it. I usually make one loaf of bread (wholemeal with sunflower seeds) a week as we only have it for breakfast. I also make wholemeal pizza dough and yesterday I made some scrummy wholemeal rolls, I know what I'm having for lunch today! Theres something so satisfying about making your own bread not to mention that its cheap, easy and delicious. Just chuck in all the ingredients and let it do its thing, couldn't be easier.

Recipe: Lemon Yoghurt Muffins

rind of 1 large lemon or 2 small ones
3/4 cup sugar
1/4 cup oil
1/2 tsp salt
1 large egg
1/4 cup lemon juice
1 cup vanilla yoghurt
2 cups self raising flour

Grate lemon rind into a large bowl.

Add the next 6 ingredients and mix well.

Sprinkle the flour on top and stir until just combined.

Bake at 190 degrees for 10-12 minutes or until lightly browned.

I like to bake with Riley, even if sometimes he doesn't actively help it still keeps him occupied and then hes not bothering me. Today he got a little side tracked licking the inside of the lemons after I'd juiced them. He apparently 'loves it' (lemons), those were his words too.

These muffins are so quick and easy to make. They are delicious warm out of the oven and are the cause of major tantrums at lunchtimes. Riley doesn't usually like muffins but these ones definitely have his seal of approval.

Budgeting Update

As I mentioned in this post here I'm trying to cut money off our weekly food bill by doing big fortnightly shops and following a menu plan.

We are now into the third week of doing this and so far it seems to be working well. We're not saving as much as I'd like but we are saving some and every little bit counts. I'm now working on tweaking my menu plan and seeing what I can make at home that will save us even more.

Riley loves stamps. He got given some really cool ones for Christmas a couple of years ago that have a stamp on one side and matching foot prints on the other side that you can roll across the page. Today was the first time that hes used them and he had heaps of fun and a HUGE melt down when it was time to stop for lunch.
